    On October 8, the pastry shop "Coup de Lapin" (Tsuruta-cho, Kitatsugaru-gun, TEL 0173-23-1880) reopened along National Route 339 in Tsuruta-cho.

    "Angelique Tsuruta store" opened under a new brand. Mr. Yukiteru Sato, who was an employee of Angelic, became independent and opened as "Coup de Lapin" launched in 2018 (Heisei 30). The store name means "rabbit's tail".

    For the renewal, all products were reviewed. The package design has been renewed, and a display using a wooden apple box is displayed in the store. The popular Tsuru-no-wasuremono, which is named after Tsuruta-cho's crane, has been changed to Tsuru-no-wa-goromo, and the rectangular apple pie has been changed to a round shape. “I made it so that you can reach the apple in one bite.

    Mr. Sato was originally from Hirosaki and moved to Tokyo to attend a confectionery school. After graduating, he worked in hotels and restaurants in Tokyo and made a U-turn at the age of 30. After working as a pastry chef at a wedding hall, he joined Angelique. I was put in charge of the Tsuruta store.

    "I was thinking of starting my own business, but I was thinking of gaining a little more experience, but the previous owner approached me about buying the Tsuruta store in 2018. I thought it was a rare opportunity, so I decided to take on the challenge." Mr Sato. He started a business in the same year and ran the Angelic Tsuruta store, but with this renewal he became completely independent.

    The new product "Lapin" (300 yen) is a rabbit-shaped pastry. "Tsurumai Udelaine" (250 yen) is a madeleine made with Aomori apples marinated in apple wine. The tofu donut (230 yen) is a donut made with soybean flour from Fukushi Tofu Shokudo (Goshogawara City).

    When they held a commemorative sale for three days after the reopening, a queue formed to surround the store. Mr. Sato says, "Thankfully, we have had many new customers come to our store. We want to become a store that takes root in the local community and where people buy our products while chatting."

    Business hours are from 10:00 to 18:30 (until 18:00 in winter). Closed on Tuesdays and Wednesdays.
