    One month has passed since the ramen shop "Chuka Soba Ichimatsu" (Waizumi, Hirosaki City, TEL 0172-40-3880 ) opened near the Takasaki intersection on National Highway No. 7.

    A ramen shop started by Mr. Takuya Moriuchi, who was involved in the night business of "Bunchan Ramen" (Tonosaki). The homemade noodles prepared on the morning of the day are served in a soup that is a blend of 10 to 15 kinds of dried sardines. It is a "non-chemical seasoning" that does not use chemical seasonings, and it is a commitment to change the temperature and simmering time depending on the type. "We aimed for a niboshi ramen that is not available in Hirosaki," says Moriuchi.

    Mr. Moriuchi was a chef from Western cuisine who was preparing to open a pasta shop, and when he was approached by Mr. Tomotaka Narita of "Bunchan Ramen", he started making ramen. Mr. Moriuchi took charge of the development by making use of his Western food experience in the "night business" that Mr. Narita started for "development of new ramen". Mr. Moriuchi shows his confidence that "the ramen that was offered at night is an evolution."

    Kohei Ishioka, who supports Mr. Moriuchi, is a chef from Japanese cuisine and has a background of working at an American sushi restaurant. Participated in "night business" from September last year and made ramen that makes the best use of Japanese food experience. At the same store, he is in charge of "soy sauce soba" and "today's rice".

    The store area is about 7 tsubo, 8 table seats and 5 counter seats. The walls were broken so that the kitchen could be seen, and the counter seats were enhanced. For self-provided water, use reverse osmosis membrane purified water and prepare two types of water containing citrus fruits. Reverse osmosis membrane purified water is also used for cooking.

    The menu is "salt soy sauce soba" and "soy sauce soba". "Plum" topped with green onions = 600 yen, "bamboo" topped with 2 kinds of roast pork and menma, green onions = 800 yen, "pine" including taste balls and wontons = 950 yen. The menu for "Today's rice" (300 yen) changes depending on the ingredients that Mr. Ishioka purchased at the market in the morning. The contents will be announced on Instagram Stories and the entrance ticket vending machine.

    It's been a month since it opened on April 30, and Mr. Moriuchi said, "We have a lot of customers visiting us, and some of them are already repeaters. I'm glad and very grateful. Ramen will continue to evolve. Therefore, I would like to continue to be a store that you can choose as one of your options. "

    Business hours are from 11:00 to 16:00. Closed on Wednesdays.
