The ramen specialty store "Yogoya" relocated from Kanazawa, Aomori City to Inada, Hirosaki City on April 8th.

The shop offers "Iekei Ramen" where pork bone soup is prepared in the shop. It closed its business in Aomori City on March 27 and moved to the site of "Ramen Inoueya" in Hirosaki City.

The owner, Takashi Yokoyama, is from a wooden structure. After working at a restaurant in Hirosaki, he had been selling and selling automobiles in the Kanto area for over 10 years. "I was eating ramen with my seniors," says Yokoyama. He started thinking about U-turns when he was 30 years old, but he said he couldn't decide on a specific job. Mr. Yokoyama says, "I liked Iekei Ramen, so I decided to start Iekei Ramen."

After returning to Aomori, I originally planned to open a store in Hirosaki, but I couldn't find a place for more than half a year. He recalls that he considered opening a store in Aomori and decided on a tenant in Aomori that he found. "It started in February 2020, but the infection of corona spread immediately. Although we had secured a large number of seats, we thinned out the seats as a countermeasure against infection, and it was difficult to balance with a part-time job. Above all, we could not see the kitchen. I couldn't see the customer's face because it was there. "

Mr. Yokoyama came to want to serve ramen while looking at the faces of customers at a store with counter seats. When he began to think about relocation and began to look for a relocation destination, he said that it was the same tenant who was told by a regular customer. "I knew the Inoue family, so I took a look at it and decided immediately," says Yokoyama. The store area is 7 tsubo and the number of seats is 8 at the counter. It is said that it is the ideal store scale for Mr. Yokoyama.

The menu is "pork bone soy sauce", "pork bone", and "pork bone miso" (750 yen or more). Toppings include pork (200 yen), glue (100 yen), spinach (100 yen), seasoned half-cooked egg (100 yen), and onion (50 yen). It will be offered at "458" (980 yen) with 3 types of toppings selected. Rice, pickles and water will be provided by self-service.

"Iekei ramen has many characteristics, but one of them goes well with a little salty soup and rice, so it's recommended to eat it together," says Yokoyama. "I'm happy to be able to see the customer's face at the counter. I want to take root as a family ramen in Hirosaki for a long time. Night business will start as soon as it's ready."

Business hours are from 11:00 to 14:00. Closed on Mondays.
