    It has been a month since the izakaya "Izakaya 13th Generation Shichizaemon" (TEL 0172-55-9573) opened in Daikancho, Hirosaki City.

    The store offers a menu that uses mainly ingredients from Aomori prefecture, and its motto is to create a store that is fun to come and calm down. The owner, Katsura Hayakawa, is a former Hirosaki University co-op employee, and the name of the store is the 13th generation from his ancestor, "Nanazaemon." Mr. Hayakawa smiles, "I'm often asked about chain stores, but it's different."

    Mr. Hayakawa from Hokkaido moved to Hirosaki when he entered Hirosaki University. “I've always liked alcohol since I was in college, so I had a part-time job in Ujimachi,” says Hayakawa. After graduating, he worked as a co-op employee at Hirosaki University, but retired in June last year.

    Mr. Hayakawa says that izakaya management has been a dream for more than a dozen years. Preparations proceeded little by little, and although it was scheduled to open last year, it was abandoned due to the corona wreck. Mr. Hayakawa said, "I couldn't help waiting for the end, so I decided to open it. The reason for opening the store in Daikancho is that the number of restaurants and general merchandise stores is increasing, and in the summer it was a good location as a Neputa service route. ".

    The store area is about 33 tsubo and the number of seats is 25. There is a smoking room for heated cigarettes and a private room in the store. It is said that the layout of the store and the design of the signboard are based on the experience of the campus convenience store and bookstore that Mr. Hayakawa was in charge of in his previous job.

    The menu is "Today's evening drink set (3 kinds of snacks and alcohol)" (1,500 yen), "Karaage" (800 yen), "Roast beef of Takko beef" (1,300 yen), "Chicken ham 3 using chicken from Aomori prefecture" Seeds, "special chicken wings" (900 yen or more), etc. “Not only local products, but also low-carbohydrate and low-fat menus that pay attention to health,” says Hayakawa. Also supports takeout. Alcohol offers beer, sour, and whiskey (starting at 500 yen each).

    One month has passed since the opening, "At first, the operation was bad and sometimes caused trouble to customers, but acquaintances in Hirosaki who lived for more than 20 years, such as former alumni and friends, came to visit us. I was happy to hear that, "says Hayakawa. "In the future, I would like to develop products exclusively for lunch and takeout, and aim to be a store that is easier to use."
