    The French restaurant "Restaurant Yamazaki" ( Oyakatamachi , Hirosaki City, TEL 0172-38-5515) was renewed on April 17th.

    The restaurant's signature menu is "Cold soup of naturally cultivated apples," which uses "miracle apples," which are known for their pesticide-free apples, using mainly local ingredients. This is the first time that the store has been completely renewed since it opened in 1996 (Heisei 8). The interior of the store was renewed by installing stained glass and devising wallpaper without changing the atmosphere before the renewal.

    The owner, Takashi Yamazaki, is one of the founders of the Hirosaki French Cuisine Study Group, and is the planner of projects such as "Western-style building and French cuisine town Hirosaki". "I was trying to excite Hirosaki and local producers with French cuisine and send it from the region," he recalls.

    Mr. Yamazaki served as the Western chef at Hotel Hokke Club Hirosaki Store (currently Hirosaki Park Hotel), became independent in 1994 (Heisei 6), and moved to the same store two years later. Opened "Cafe Yamazaki" and "Western Tea House Salon de Jinbei" and continues to the present day.

    The background of the renewal was the rupture of the water pipe due to the freezing that occurred on the 3rd floor of the same building on January 13. "The store was flooded and I couldn't move without boots. I was at a loss because of the double punch of sales and water accidents caused by the new coronavirus, and I thought about closing the store," says Yamazaki.

    The store was closed from the same day, but as he worked with the staff to clean up and act as a proxy at Cafe Yamazaki, his desire for a comeback became stronger. "I want to do as much as I can," says Yamazaki. Because Hirosaki has local producers who are particular about pesticide-free and organic, local cooks who can make the best use of the ingredients are motivated to send out dishes using local ingredients.

    Upon renewal, not only the inside of the store but also the kitchen was renewed. With a new theme of "restaurants that make you happy," he wants children to become more positive with cooking and to raise their interest in food education.

    Mr. Yamazaki smiled, "For me, the rupture of the water pipe may have been clean water. On the contrary, I feel like I was saved. What I can do is give back to everyone by cooking." Show.
