    The ramen shop "Nobu" (Fujisaki-cho, Minamitsugaru-gun, Aomori Prefecture) opened on April 1 near the bypass entrance intersection of National Highway 339.

    The store offers traditional Chinese soba. Nobuyuki Nagauchi, who has been with the ramen specialty store "Nakataya" in Hirosaki for seven years, has opened a store on the site of "Soba-dokoro Fujikura".

    Mr. Nagauchi is from Hirosaki, and after working part-time at a chain ramen shop, he became interested in cooking and decided to gain experience. "Nakataya" left the company in April last year with a view to becoming independent. "People who work in the kitchen have a longing for outdoor work," said Mr. Nagauchi, who did not start a business immediately due to the corona sickness. I started preparing for it.

    The genre of ramen offered at the restaurant to be opened was not decided, but while working with farmers, he decided to use Chinese soba, which farmers often eat. “I've come to like ramen that can be provided to farmers who support Aomori's core industry,” says Nagauchi.

    Initially, he was thinking of opening a store in Hirosaki, but it was difficult because the conditions were not met. At the recommendation of an acquaintance, I had a look at the store. Mr. Nagauchi immediately decided, "I want to please customers at such a store by looking at the condition of the kitchen that was being used cleanly."

    The store area is about 12 tsubo and the number of seats is 12. The inside of the store was absent, leaving the counter table and small rises, but the atmosphere of the floor and walls was changed. Chinese soba "Ramen" (medium = 600 yen, large = 700 yen) was difficult to develop and was completed just before the store opened. “The soup I made without using a set of vegetables that I happened to forget to buy was exactly what I was aiming for,” says Nagauchi. He reveals that he has made a self-confident work.

    In addition to "Ramen", the menu includes "Children's Ramen" (400 yen) and fried rice (medium = 600 yen, large = 700 yen). There are also toppings such as increased char siu (medium = 850 yen, large = 950 yen), eggs, green onions, and menma (more than 100 yen).

    Mr. Nagauchi is grateful that apple farmers, friends and acquaintances have visited us two weeks after opening. His future goal is to cater ramen, and he is also considering food stalls. "I want to not only come, but also go out and offer ramen. I hope I can make various people smile with the ramen I make," he said.

    Business hours are from 11:00 to 18:00. Closed on Thursdays.
