    French restaurant "Chez Ange" ( Tonosaki , Hirosaki City, TEL 0172-28-1307) The owner, Makoto Sato, started selling a new product "Silk Raw Bread" on January 5th.

    Mr. Sato gained experience as a chef at hotels in Tokyo and Utsunomiya, and moved to Hirosaki after attending Too Gijuku High School. He served as the chef at the Hirosaki Hokke Club (currently Park Hotel) and the Aomori Royal Hotel, and opened "Che Ange" in 1998 (Heisei 10).

    “Making bread has been a dream for many years,” says Sato. "I heard about silk powder from a colleague of a cosmetics company last spring. I focused on the fact that it is high in protein and nutritious. Due to the influence of the new coronavirus, customers have been distant and I have more time to spare. Silk powder I heard that no one is making bread in Japan, so I decided to take on the challenge. "

    "Bread making is my style. I wanted to eat delicious food, so I made many trials and it became a new product without compromise," he says with confidence. "During development, it will be a rare bread in the world, so there was a proposal from Tokyo to raise funds by crowdfunding, but I declined because I wanted to provide something that I was satisfied with," says Sato.

    Along with the sale of "silk raw bread", a new bread studio "Patch, Paris" was also established to display and sell factories and cakes on the premises. "I had been thinking about a facility with a workshop and a showroom for a long time, but now that I can't expect to attract customers due to Corona, I have time and can renovate it," he said. This is the first renewal since its opening. In addition to raw silk bread, apple pies and cheesecake are also sold in the store.

    Regarding "raw silk bread," Mr. Sato said, "When I asked a baker with a background of nearly 40 years, it was said that the recipe was difficult to imitate. Some people said that it was like a cake instead of bread. You can eat it as it is, but if you bake it until it turns brown, the amino acids contained in the silk powder will burn and a cheese-like flavor will be created. I personally recommend it, "smiles.

    The sale time is from 11:30 and will end as soon as it runs out. The price is 1,200 yen per loaf (limited to 40 pieces per day).
