    The ramen shop "Ebisoba Kaneyuki Hirosaki Store" (Fujimi-cho, Hirosaki City, TEL 050-6870-7727 ) opened on December 19 near Hirokoshita Station.

    The shop offers ramen that uses several types of shrimp, mainly Omar shrimp, and combines pork bone and chicken soup. Founded in October 2019, it opened a store in Fujikawaguchiko Town, Yamanashi Prefecture. After that, it opened stores in Engaru Town, Hokkaido, Ami Town, Ibaraki Prefecture, Kasukabe City, Saitama Prefecture, etc., and became the 7th store in the same store.

    The representative, Takashi Yoshida, is from Hiroshima. Mr. Yoshida, who has studied abroad in the United States, has the goal of transmitting Japanese food overseas, and says, "I wanted to compete with ramen that can bring out originality." "It's hard to accept pork bones and dried sardines overseas, so I decided to use the shrimp that I liked."

    The opening of Hirosaki is due to a cross-industry tie-up with the beauty salon "Total Beauty Salon Mimi" (in front of Hirosaki City Station) in Hiroro. The owner of "Mimi", Shun Terazawa, is from Ajigasawa and went to school while staying at Hirosaki High School. After graduating from high school, he moved to Tokyo, became a businessman, and opened "Mimi" in March this year.

    Mr. Yoshida and Mr. Terazawa met around October. The reason was that the owner of "Ebisoba Kinko Ami Store" (Ibaraki Prefecture), which opened in November, was introduced by an acquaintance with Mr. Terazawa. "We are not developing a franchise, but we are opening stores with people who are rooted in the local community and who agree with my ideas as partners," says Yoshida.

    Mr. Terazawa said, "I want to change the current situation where young people cannot settle in Aomori and go out of the prefecture as much as possible. I sympathize with Mr. Yoshida that ramen is a food that is familiar to young people and can be transmitted as an attractive job. , I decided to open a store as a partner. "

    The store area is about 15 tsubo and the number of seats is 18. Mr. Yoshida and Mr. Terazawa played a central role in renovating the former bar site from December. "The interior of the store, which is based on black, is the color that Mr. Terazawa imagines," says Yoshida. Mr. Terazawa says, "The building of the store is a boarding house facility, which overlapped with the time when I was boarding. Of course, I checked the traffic volume, but I chose a place with many students."

    There are three types of menu: "Shrimp Miso Ramen" (890 yen), "Shrimp Shio Ramen" (890 yen), and "Shrimp Tomato Ramen" (940 yen). In addition to toppings, boiled eggs, seaweed (100 yen or more), extra rare char siu (200 yen), rice (150 yen), small bottled beer (350 yen), soft drinks (200 yen), etc. are also available.

    Despite the heavy snow on the first day of the opening, it is said that there was a line of about 30 people at one time. Mr. Yoshida recalls, "I was worried if there was a reaction when I saw the weather on the day." "The person who lined up at the top of the line is the restaurant owner I met in Hirosaki. Hirosaki has a human touch that returns me as a person when I treat him as a person," he smiles.

    Business hours are from 11:00 to 14:30 and from 17:00 to 21:00.
