    ``Chuka Soba Kudo'' (Omachi, Hirosaki City) opened on November 1st.

    This restaurant serves traditional Chinese noodles. The owner, Takuya Abe, has loved ramen since he was a child and wanted to open his own ramen shop. I longed for a store name with my own name in it, but thought it would be better to use my mother's maiden name, Kudo, which is the most common surname in Aomori Prefecture, rather than Abe, so I decided on Kudo.

    Mr. Abe, who had experience as the manager of ``Menbo Jubei Fujisaki Store'' (Fujisaki Town), retired in August of this year and began preparations for independence. Initially, they were thinking of opening a store in Kuroishi or Hirakawa, but they decided on the same tenant on the first floor of the Hibiya Center multi-tenant building. “I liked the retro feel of the store,” said Abe.

    The most distinctive feature is the flat noodles, which are homemade noodles made from wheat used for bread. Abe says, ``These are unusual noodles that have a filling and chewy texture.You can choose the thickness of the flat noodles, but they are not ``thick'' or ``thin,'' so we choose ``thick'' or ``thin.'' Currently, only thin flat noodles are available, but they will be offered once operations are in place.

    The store area is approximately 3 tsubo, and there are 8 counter seats. The menu includes Chinese noodles, salted Chinese noodles (medium = 750 yen, large = 850 yen), and rice (100 yen). From mid-November onwards, they plan to offer ``Fushidori Soba'' (850 yen), a limited menu, toppings, and side menus such as ``chicken stew'' and ``tip of menma with chili oil.''

    Abe expressed his enthusiasm, saying, ``I was worried whether flat noodles would be well-received, but I feel like I'm getting a good response.I want to become a ramen restaurant that will be loved for a long time and that people can eat over and over again.''

    Business hours are 11:00 to 15:00. Closed on Tuesdays and the third Monday of the month.
