On December 22, last year, "Chuka Soba Bunshiro" (Obinai, Hirosaki, TEL 0172-26-8566) opened on December 22, last year.

The store is headed by Toru Yamazaki, who has developed the mail-order product Tsukimino Ramen at the Kenseikai facility for people with disabilities in Tsugaru City, Aomori Prefecture. Regarding the process of opening the store, "I wanted to create a place where people with disabilities can work with their favorite ramen." The store area is about 19 tsubo. There are 6 counter seats and 8 table seats.

Mr. Yamazaki was absorbed in Magic when he was a student who was studying welfare, and he is also active as a magician "Yamazaki Toru." “It takes a long time to prepare and see customers' happy faces. Magic and ramen making are similar,” says Yamazaki.

There are two types of menus that focus on "no chemical seasoning": "concentrated niboshi (thick noodles)" (750 yen) and "Chuka soba (thin noodles) niboshi" (650 yen). Toppings are taste eggs (100 yen) and char siu (200 yen). Large 100 yen increase. Rice balls (100 yen) are also prepared.

According to Mr. Yamazaki, it was said that it took 2-3 months to develop the "Dense Niboshi Chuka," and the people around it tasted it well. "There are some people who are not good at even Tsugaru who likes thick dried anchovy ramen. I made it a seasoning that can be eaten by such people," he said.

On the other hand, the taste of "Chuka soba niboshi" was not fixed, and the opening date originally planned for December 10 was postponed to 22 days. “While continuing trial and error, the god of dried sardines came down,” says Yamazaki. "I finished the ramen that I like today so that everyone doesn't like it."

Business hours are from 11:00 to 15:00.
