    Aomori bagel shop "KAMA'n BAGEL" (5 Okikan, Aomori City) started selling a new menu item "Roasted Pork Sandwich with Onion Koji" on June 27th.

    This shop sells bagel sandwiches with side dishes and mini breads that change daily, centering on bagels that have been fermented at a low temperature for over 20 hours using natural yeast. The owner, Naoko Kamata, said, "It's been 11 years since I started working under the policy of 'delivering what I think is delicious to customers,' and it's been 8 years since I opened the store.

    “Onion koji” is a fermented umami seasoning made by mixing onions, raw koji, and salt. Mr. Kamata says, "Because bagels are also fermented, I've always been interested in the fermentation process. A friend recommended me to make my own onion koji, and I tried using it in a variety of dishes. The roast pork was very delicious, so bagels. After repeated trials to add it to the menu, the 'Roast Pork Sandwich with Onion Koji' was completed."

    “We continue to make bagels with the encouragement of our customers saying, 'It was delicious!' Plus, it's a perfect ingredient for a simple plain bagel. I'm proud of it, so I want you to try it once," he said with a smile.
