"Kushiage Yanagi" (Shinkajicho, Hirosaki City, TEL 090-2944-9494) opened on April 22nd near the Nakasan Hirosaki store.

The restaurant's main course is the deep-fried skewers. Jun Koyanagi from Kobe, who moved to Hirosaki in 2022, opened the restaurant. "Hirosaki doesn't have a kushiage culture, so I decided to open a restaurant to let people know about the authentic taste," says Koyanagi.

Koyanagi says he worked at a kushiage restaurant in Kobe for about 14 years. “I came to Aomori in 2019 to see Koyanagi Station, which has the same name as me,” says Koyanagi. In February 2022, he started living and working at the Yamano Hotel (Tokiwano), but in January 2023, the Yamano Hotel went out of business.

Koyanagi said, "I didn't have the option to go back to Kobe. Hirosaki is a rural area compared to Kobe, but I don't feel inconvenient. I decided to open a kushiage (deep-fried skewers) store as I could.”

It was said that it was difficult to procure the ingredients for the preparation. “The bread crumbs needed for deep-fried skewers were not available in Hirosaki, so we purchased them from outside the prefecture. All the seasonings are homemade. Use the site of the tavern without living. The store area is 7.5 tsubo. The number of seats is 9.

The main menu is the Rokko course (4,000 yen) and Omakase course (6,000 yen). The drink menu includes bottled beer (600 yen), non-alcoholic beer (400 yen), and Kaku highball (500 yen).

Mr. Koyanagi says, "I want the people of Hirosaki to eat delicious food. I want to create a restaurant where people can enjoy conversations and leave satisfied. We always use seasonal ingredients. I would like to try deep-fried skewers using rare ingredients that I can get in Hirosaki," he said enthusiastically.

Business hours are from 17:00 to 23:00.
