    Aomori's ramen shop "Niboshi Ketsusha Passion Billy" (Ishie Okabe, Aomori City) was renewed on March 1 as "Junjo Cafe Kurobara NUTS (Kurobara Nuts)" (TEL 017-715-0896 ).

    Billy, which opened in 2012, changed its business style and became a coffee shop serving Japanese-style spaghetti and spice curry that can be eaten with chopsticks. Management remains unchanged, NON'S CAFE GROUP.

    Mr. Michiyasu Ueda, the president of Non's Cafe Group, opened "Menya Zetton" (Green 2), which mainly serves ramen, which was a popular menu after running izakaya "Nira Bancho" and "Handsome Shokudo". “Until now, I have challenged stores that specialize in hormones, jinkiskan, plum wine, and potato shochu.

    “The number of ramen shops has increased compared to 10 years ago, and I began to think that I needed a new challenge.

    According to Mr. Ueda, at first he was thinking of opening a new coffee shop instead of changing the industry. He had been looking for a place to open a store before the corona crisis, but when the conditions were not met and it was difficult, he began to think about changing the business category of "Billy". “I thought about opening a restaurant that offers a new menu, and the pasta I used to eat as a meal gave me a hint,” says Ueda.

    I struggled with menu development. Visited and researched outside the prefecture many times. The theme is a combination of Japanese and Western styles, with the ``Kurobara Niboshi'' (980 yen) spaghetti based on dried sardines, the ``Hamajiru Mentaiko'' which is a collaboration of mentaiko spaghetti and salt ramen, and a combination of bonito sauce and carbonara. "Katsuo no Carbonara" (all 1,200 yen) is Ueda's proud product.

    The store area is 30 tsubo, and the number of seats is 35. The interior of the restaurant is inspired by the 80's, and the lighting was imported from Hong Kong. The neon letters installed in the store were adopted because of the concept of "Senfuku Wanrai," which means thinking about the happiness of customers.

    The menu includes dashi natto (1,080 yen), Naples spells (980 yen), and more. During lunchtime (11:00-13:00), there is a lunch menu with soup for 980 yen. Chicken curry (880 yen), two types of aigake (1,200 yen), blended coffee (400 yen), fresh strawberry juice, and caramel coffee (580 yen) are also available. A limited menu will also be available.

    Mr. Ueda says with a smile, "We have created a restaurant where you can enjoy an extraordinary experience. There are still many things we want to be particular about, but we want to continue to create a restaurant that customers can enjoy."

    Business hours are from 11:00 to 15:00 and from 17:00 to 20:00. Closed on Tuesdays and 1st and 3rd Mondays. For the time being, it will only be open for lunch, and will offer a lunch menu.
