    A month has passed since the ramen shop “Chukasoba Marumi” (outside the gates of Hirosaki City) opened.

    Marumi opened in the site of the prefabricated “Kadoge 4-chome Shokudo”, which closed in 2021. The owner, Yuki Ishioka, wanted to "provide simple ramen that men and women of all ages can enjoy." put on a pillar.

    After working at a champon specialty store in Kyushu, Mr. Ishioka returned to Hirosaki at the age of 24. After being involved in the opening of a city hotel, he became independent. I used to run a restaurant in Hirosaki, but due to the spread of the new coronavirus, I closed all the shops. "I was charging during the corona period," said Mr. Ishioka. “Actually, I haven’t told my family that I started the restaurant yet,” he says with a smile.

    The store area is 7.5 tsubo, and the number of seats is 7 seats at the counter and 4 seats at the table. The size of the previous prefabricated store was halved, and Mr. Ishioka did as much of the interior as possible. The counter table was lowered to make it easier to serve customers.

    Mr. Ishioka says that the opening date is January 28th, but it was actually a pre-opening. The arrival of equipment such as a boiled noodle machine for commercial use was delayed and it seemed that it would not be possible to make it in time. “The pre-opening day has become the opening day,” said Mr. Ishioka. It is said that all the equipment that was delayed is now complete.

    The menu includes Chinese noodles (medium = 580 yen, large = 680 yen), miso ramen (medium = 680 yen, large = 780 yen), rice (medium = 100 yen, large = 200 yen). Ajitama (100 yen), char siu (200 yen), green onions (150 yen) and other toppings are available. If you order a bowl of ramen, you can bring rice balls and lunch boxes.

    It's been a month since the opening, and I've gotten used to the operation, and I've been able to afford to add a menu such as curry (580 yen, mini size = 220 yen). Mr. Ishioka says, "There are people in the neighborhood who have become repeat customers, and we have conversations like, 'Did you come again?' .

    Business hours are from 11:00 to 16:00. Closed on Wednesdays.
