    Aomori's ramen shop "Shina Soba Ishioka" (3 Midori, Aomori City) opened on February 1st.

    This shop offers "Tsugaru Ramen" based on dried sardines. The owner is Koji Ishioka, the grandson of Kiichiro Ishioka, who ran a ramen stall in the Aburakawa area of Aomori City shortly after the war. Since February 2019, he has been operating a stall at the Passage Square as "Mendokoro Kiichiro Ishioka", which borrowed his grandfather's name, but closed the shop in December last year and moved.

    Regarding the reason for the move, Mr. Ishioka says, "Originally, we were opening a business in the Passage Square for startups. It was too small for a stall business, and we were told about a good property, so we decided to move."

    The store area is 15 tsubo, and the number of seats is 18. Refurbishment of the lunch box shop, counter seats and table seats were provided. Mr. Ishioka says, "My grandfather's stall was known for 'Shina Soba no Ishioka,' and many people said, 'Is that Mr. Ishioka's grandson?'

    Ishioka was a civil servant, but quit at the age of 36 and started training at a ramen shop. “When I saw my father running a Chinese soba restaurant, I wanted to open a ramen restaurant myself. I visited Mr. Fumitaka Tsubo, who is Mr. Ishioka's cousin, who runs "Menya Kiichi" (Yawaki Kouhata) and learned about "Chuka soba".

    According to Mr. Ishioka, Mr. Tsubo is the second daughter of Kiichiro Ishioka, and is said to be the only person who knows Kiichiro Ishioka's ramen. “Kiichiro Ishioka was a stubborn person, and there is an anecdote that he never taught his family the recipe.

    The current menu is only Chinese soba (750 yen). With boiled egg (850 yen), with 2 slices of pork (900 yen). In addition to rice, toppings such as a large serving of noodles, more green onions, and more bamboo shoots (100 yen each) are also available. “Once I get used to the operation, I would like to serve miso ramen,” says Mr. Ishioka.

    Regarding future goals, Mr. Ishioka said, "First of all, we should stabilize the current operation." “In the future, I want to try the Reiwa version of yatai ramen in a kitchen car.

    Business hours are from 11:00 to 15:00 and from 17:00 to 20:00. Closed on Tuesdays.
