"Aburi Tendon Tenjun" (Yasukata, Aomori City) offers tendon with soft roe, and is so popular that it sells out every day.

This restaurant offers tempura rice bowls made with seasonal ingredients. Milt, which is in season in winter, has many repeat customers, and this year, it started serving on November 1st. Many eagerly awaited fans visited from the first day, and it is said that most of the orders were tempura rice bowls with soft roe. The owner, Mr. Jun Tsushima, says confidently, "I receive good fish from a reliable fresh fish shop.

Having trained at hotels and Japanese restaurants, Mr. Tsushima is confident in his connoisseurship of seafood. “The soft roe matures from December to January and becomes thicker. Now is the peak season. We can serve it deliciously until mid-February,” says Mr. Tsushima.

The store opened in 2014 and moved to its current location a year and a half later. The signboard menu "Aburi Tendon" is a menu that Mr. Tsushima has been warming for many years. “During my training days, I tried grilling a bowl of rice topped with crab sticks and vegetable chops, and the aroma of the sauce whetted my appetite, and I thought it would be good,” said Mr. Tsushima. “The tempura is fried at a high temperature to achieve a crispy texture.

Mr. Tsushima says with a smile, ``Although searing is free and it's just my preference, the combination of milt and searing is the best among the ingredients.

The "Majiro and Shrimp Tendon Set (with Mini Udon)" is 1,450 yen, and the Tendon separately is 1,250 yen. Add Shirakoten (sansho salt or tempura soup) for 550 yen.

Business hours are from 11:30 to 14:30. Shirako may not arrive due to fishing conditions. The offer will be available until mid-February.
