    On December 12, near Aomori Chuo Gakuin University, a ramen specialty store “Iekei Ramen Oudoka Jikiden Aomori Noroya” (Nojiri Imada, Aomori City) opened.

    It is a new brand of "Aomori Taishoken", which has three stores in Aomori Prefecture, and offers Iekei ramen. The owner, Tsunataka Noro, fell in love with the personality of Hiromasa Shimizu, the owner of the ramen shop "Oudouya" in Kashiwa, Chiba, and learned how to make Iekei ramen, leading to the opening of the restaurant.

    Mr. Noro broke his bone in February last year, and it is said that he learned about Mr. Shimizu of "Oudouya" on the Internet while recuperating. "I visited without an appointment because I couldn't stay there, but they kindly accepted me and taught me how to make Iekei ramen. It was also when I was conceiving a new ramen brand," says Noro. Mr. Miss.

    I learned how to make ramen while working with Mr. Shimizu, but Mr. Noro himself thought about how to adjust the taste and how to make the soup, and created it in a way that reproduced it. Noro says, "I'm just worried about the opening, and I still haven't been able to make ramen that I'm 100% satisfied with. Just the way the pork bones are mixed in makes the taste different. I think ramen is all about having no answers."

    The store area is 30 tsubo, and there are 12 table seats and 12 counter seats. The kitchen is open so that you can see how the chicken bones and pork bones are being mixed and taken out from the counter. "Ramen is a leisure activity. I want people to enjoy ramen as a 'story,' as well as transmitting information on YouTube."

    The menu includes ramen (800 yen) and pork noodles (950 yen), toppings such as flavored eggs, "more spinach", seaweed (5 pieces), rock seaweed (100 yen), and Japanese-style green onions (150 yen). Menus such as green onion ramen and spicy green onion ramen are also in preparation.

    All sales on the first day of opening will be donated to child welfare facilities. Mr. Noro said, "I was able to contribute to society as a condition of being directly taught by the royal road. On the first day, customers lined up around the store even before it opened, and Mr. Shimizu rushed over. "I want to entertain the people of Aomori through ramen. I want to make better ramen tomorrow than today and the day after tomorrow."

    Business hours are from 11:00 to 15:00 and from 17:00 to 21:00. Closed on Tuesdays.
