    The sushi restaurant "Sushi HiRO" (Suehiro, Hirosaki City, TEL 0172-26-8281) opened on December 12 near Joto Park in Hirosaki.

    The owner, Mr. Hiroshi Koshi, opened the restaurant with the desire to "enjoy sushi in a casual setting." The store name "Hiro" has three meanings: "Hirosaki", the address "Suehiro", and the name "Kan".

    Koshi started working part-time at Ikkyu Sushi (Joto 2-chome) at the age of 15, and worked at Ikkyu Sushi even after graduating from high school, where he stayed for 27 years. He was thinking of going independent after his own child graduated from high school, but he postponed the plan by a year due to the effects of the new coronavirus.

    According to Mr. Koshi, initially he was thinking of opening a tenant shop in the suburbs of National Route 7, but the conditions did not suit him, so he decided to build a new shop. The design was commissioned to an architect introduced by a regular customer of Ikkyu Sushi. The single board of the counter is a personal item of my grandfather who lived in Fukaura and Iwasaki. The sushi clogs were made by relatives who are woodworkers, and the menu and shop name logo were handwritten by a calligrapher he met at a Neputa group he participated in. “I was able to open the store with a lot of help,” says Mr. Koshi.

    The store area is 18 tsubo. There are 17 seats. “The exterior is unified in black, and the interior is based on white. A shelf is provided between the counter seats and the table seats to separate each seat.

    The menu includes sushi (normal = 1,100 yen, high = 2,750 yen, special = 3,850 yen), chirashi (high = 2,750 yen, special = 3,850 yen, rose chirashi = 2,750 yen), rolls (from 220 yen), Assorted sashimi (from 2,200 yen), assorted tempura (2,200 yen). Mr. Koshi says with a smile, "Based on the children's advice, we serve roast beef (1,650 yen). I think it's rare at sushi restaurants." Reservations are required for course meals (from 4,400 yen). During lunch time, four kinds of set meals (1,650 yen each) are prepared.

    Mr. Koshi said, "Having my own store is a mixture of anxiety and expectations, but it's fulfilling. There are still some things I'm not used to, but I want to take root in the community little by little. I want people to feel free to use it." talk to.

    Business hours are from 11:00 to 14:00 (weekdays only) and from 17:00 to 22:00. Closed on Wednesdays and once a month on Sundays.
