    Hirosaki's Neapolitan pizza specialty store "Pizzeria da Sasino" (Hirosaki City Dote-cho TEL 0172-33-2139) started selling homemade burratas on January 30th.

    Burrata is said to be native to Apulia, Italy, and is a fresh cheese containing mozzarella cream. It is not distributed in Japan because it has a short shelf life, but it is not well known, but some people who tasted it said that it would be addictive, and the owner of the store, Michiaki Sasamori, was also impressed by the fact that it was eaten. I was alone.

    At the sister shop “Ostereria Enoteca da Sasino” in the city, although Burrata was offered in the course menu, it could not be manufactured in the number that could be sold. Since April of last year, we have established a system to provide homemade mozzarella, and at the "JAPAN CHEESE AWARD 2014" (sponsored by the Cheese Professional Association) held in October, the burrata at the shop won the gold medal. It was fully sold.

    Kyohei Tasaki, who is in charge of making Burrata, wakes up at 7 am every morning and goes directly to the ranch to get her jersey milk. Jersey milk is pasteurized, and the curd of the day before lying is molded into a product until it becomes a lump called curd (cured milk). Mr. Tasaki says that after going through this process, he will enter the store before the daytime business starts. "Because each piece is hand-made, you can make 10 to 15 pieces a day," he says.

    There are days when reservations are made and sold out as soon as the sale starts. "When purchasing, check the stock by phone," says Sasamori. Show his confidence that "I want to send Burrata from Hirosaki to the world." The price is 700 yen for 2 pieces.

    Business hours are from 11:30 to 14:30 and from 17:00 to 21:00. Closed on Mondays (Tuesday if it is a holiday).
