    The wine and small dish bar "Bistro Petit" (Okeya-cho, Hirosaki City, TEL 0172-26-7175) opened in Hirosaki on May 11th.

    The restaurant opened with the aim of offering small quantities of dishes made with seasonal ingredients so that even a small number of people could enjoy it. Toshiki Bando, who worked at “Bistro x Steak Doteria” (Dote Town), started up with chef Hideyuki Tanto.

    After working at a restaurant in Tokyo for more than 10 years, Bando returned home and opened "Doteria". After graduating from a vocational school, Mr. Danto worked at a Chinese restaurant in Tokyo. After returning home, he was in charge of cooking at “Cherry-An” (Cherry-An) (Dotemachi), and from “Doteria” from 2017.

    Bando says that Mr. Tanto is a "trustworthy chef," and that the dishes are only conveyed by the concept. Bando thinks about the wine that Mr. Danto makes, and Mr. Bando thinks about the dish that Mr. Bando proposes. He smiles, saying, "Two legs and three legs match your breath."

    The store area is 8 tsubo. There are 16 seats, 8 of which are counter seats. Mr. Tanto said, ``I haven't had the opportunity to go to the kitchen and even see the customer's face in the shops I used to have, but it was inspiring not only to be able to talk to the customer at the counter seat but also to see the reaction up close. It will be."

    As for the meal menu, à la carte single dishes (350 yen and up) and course menus (5 dishes and up = 2,000 yen and up) are offered. Mr. Tanto purchases all the ingredients for cooking. “I buy directly at the market or directly after purchasing vegetables. I am grateful that I can do things I couldn't do before,” says Mr. Tanto.

    The drink menu includes eight types of glass wine (480 yen and up) selected by Mr. Bando so as not to cover the production area and varieties, about 30 types of bottle wine (2,500 yen and up), craft beer (650 yen) and cocktails (580 yen). We prepare homemade sangria (650 yen) and yen. It corresponds to the charter from 6 people.

    It's been half a month since the store opened, says Bando-san, "although our store is small, we feel the response due to the use of female customers and colleagues."
