On June 29, the Tsukemen specialty store "Niboshisha Hirosaki" opened in Mikami Building near Hirosaki Park (Genji-cho, Hirosaki, TEL 0172-55-6631).

The same store that offers tsukemen, which is characterized by a deep-boiled dried soup called "Kanibo". The store area is 20 tsubo and there are 17 seats. "Non's Cafe Group" (Aoba, Aomori City), which deals with ramen shops such as "Noodles and Zetton" and "Passion★Billy" in Aomori City, has opened as the first franchise store in Hirosaki.

Ryuji Kamada, the store manager, said, “The idea of creating a company culture that keeps you amused and challenging various things is one after another.” "It's rare in Tohoku to try tsukemen with garlic toast or bonito soup with Espuma (foamed ingredients)," he said.

The Mikami Building, where the store is located, is a nationally registered tangible cultural property built in 1927 (Showa 2) and is the oldest existing reinforced concrete building in Hirosaki City. “Billy has a Western-style antique, and Zetton has a Showa Retro atmosphere. Our shop follows that, and the interior matches the atmosphere of the building,” says Kamata.

The ramen menu is "thick seafood tsukemen" (750 yen), "moret !! shrimp spicy tsukemen" (850 yen), "meat soup Benkei tsukemen" (780 yen), "niboshi daio no tsukemen" (880 yen), "omar" Shrimp soup and roast beer tsukemen" (1,200 yen). In addition to the side menu of Nibo Meshi, half curry, Chamayo bowl (above 290 yen), we also prepare toppings such as miso balls, menma, cheese and allium onions (above 100 yen).

Mr. Kamata said, “It has been two weeks since the opening, and there were customers who came from outside the prefecture only through word-of-mouth communication such as SNS. There were more female customers than originally expected, and I am surprised that there are elderly visitors. I realized that ramen is a food culture that has been firmly established in Tsugaru."

“There were people who used to have coffee or drink at a nearby shop after using our shop. People came to gather in Hirosaki's main street, Dotemachi, through niboshi ramen. , If you can send it to the outside of the prefecture,” he smiles.

Business hours are from 11:00 to 15:00 and from 18:00 to 21:00.
