    On December 11, last year, a pastry shop “Patisserie Laport” (Hirosaki City Denen, TEL 0172-55-5040) opened near Joto Park in Hirosaki.

    Yohei Miyazawa, the chief pastry chef, is from Shichinohe, Aomori prefecture. Born as the second son of Miyakin, a Japanese confectionery store with a history of more than 100 years. After graduating from high school, he moved to Tokyo. After graduating from a confectionery vocational school, he got a job at a Western confectionery store in Tokyo, and in 2003 won the Chocolate Craft Confectionery Semi-Grand Prix at the "Japan Cake Show Tokyo" sponsored by the Tokyo Confectionery Association.

    Yohei, who returned to Aomori at the age of 30 and got a job at the family business “Miyakin,” recalls, “I wanted to have my own shop in Aomori.” When preparing for the opening of business, he conducted a survey of the markets in each area of the prefecture and said, "Hirosaki had the greatest chance." Mr. Makiko, the wife who runs the shop together, also analyzes that "Hirosaki has the best culture for eating Western sweets in the prefecture."

    It's been nearly a month since it opened, and there are repeaters. The sale that started from the opening day had more customers than expected, so we took a temporary closure for 2 days to manufacture the product. “I'm sorry for the customers who were looking forward to it,” says Makiko. Mr. Yohei says, "There were 1.5 to 2 times the expected number of customers."

    The store area is about 25 tsubo. Some people say that the appearance is so cute that some customers stop by. The menu is "Strawberry Short" (350 yen), "Strawberry Millefeuille" (380 yen), Mont Blanc (350 yen) with the shop's logo as a motif, and the work that won the second prize at "Japan Cake Show Tokyo". We sell chocolate cake "Amfiquette" (390 yen), cream brulee (300 yen), etc. Baked sweets include Madeleine (150 yen), Financier (160 yen), cookie coconut (80 yen), Florentin (130 yen), and cookie chocolate (90 yen). We also prepare a set of 10 cookies (940 yen), gifts (small = 1,060 yen, medium = 1,570 yen, large = 3,570 yen).

    Regarding the future, Mr. Yohei is enthusiastic about adding new menus such as apple pies using Hirosaki apples. There are already inquiries and some say, "I'm looking forward to it." "I want to make an apple pie that feels ashamed of the city of apples, Hirosaki," he smiles.

    Business hours are from 10:00 to 19:00. Closed on Wednesdays. In addition, there are two consecutive holidays once a month, which will be announced at the store or on the Facebook page.
