    The soy burger specialty store “Niche” (Namioka, Aomori City, TEL 090-2274-6351) opened in Aomori / Namioka on June 8.

    The store manager, Hayato Yukita, is from Namioka. He went to Tokyo 11 years ago to study a cafe, worked at a popular gourmet burger store "Fire House" (Hongo, Bunkyo-ku, Tokyo), and was fascinated by the depth of burgers.

    Mr. Yukita, who returned home in the summer of 2010 saying "I want to open a hamburger store in Aomori," said in 2011 that a soy meat product using only soybean-derived vegetable protein from a natural food store "Aozora" (Namiuchi, Aomori City). After knowing the existence and receiving the suggestion, "Try making a hamburger," I set out to open a soy burger specialty store.

    “When I was working at the Firehouse, I saw a lot of children who were allergic to eggs and animal proteins,” says Yukita. "I learned that there are many children who can't eat, which also gave me the opportunity to start a soy burger," he said. There is also a commitment that does not use eggs for buns.

    Started sales by mobile sales and continued opening stores for events and live performances for about two years. The opening of the store is due to the connection with Akiko Kaneda of the former cafe "pommiel". “I started to keep in touch with each other because it was published on the same page in the evening edition of a local newspaper,” he recalls.

    The store area is about 5.5 tsubo. There are 20 seats. The inside of the store has a natural country atmosphere. Menu is soy burger (650 yen), beef hamburger (750 yen). Both come with potatoes. Cheese (150 yen), eggs (100 yen), bacon (200 yen), avocado (100 yen), etc. as toppings. Each soft drink costs 350 yen.

    “I would like to increase the number of side menus such as specialty coffee and salads,” says Yukita. I am looking forward to the fact that the business has started and I have become busy. "I would like to convey my experience if there is a person who wants to make a hamburger."

    Business hours are from 7:30 to 8:30. Closed on Monday and third Sunday.
