    The pizza restaurant "Pizzeria Meer" (TEL 0172-88-5428) opened in Daikanmachi, Hirosaki City on April 7th.

    The restaurant that offers Makiki kiln pizza, home-roasted coffee, wine, etc. baked with apple trees. The owner, Keihei Mouri, is from Tokyo. I used to work at “Pizzeria da Sasino” (Bank Town), which closed on March 15th. "I visited Hirosaki for the first time when I was 24 years old. I was impressed by the charm of the four seasons and the deliciousness of the ingredients, and I was thinking about becoming independent in Hirosaki."

    With the goal of becoming a cook, Mori dropped out of college and gained experience at restaurants and hotels in Tokyo. “I was grateful to the customers for saying that it was delicious, but I felt frustrated because there were no words to return. Since then, I try to listen to the producers and see the production site in order to learn more about the food. It became like this,” says Mori.

    I visited Hirosaki because I wanted to work under Mr. Michiaki Sasamori of “Osteria Enoteca da Sasino” (Honmachi). “I was refused three times, but I was hired as the startup staff for “Pizzeria da Sasino” because of my experience baking pizza,” he recalls.

    When Mori once left Hirosaki in 2014, he was preparing for independence. After studying in Italy and France, after returning to Japan, he worked at the French restaurant “Cante Sans” (Shinagawa Ward, Tokyo). He returned to Hirosaki in 2019 and worked until the closing of "Pizzeria da Sasino". "The closing of the store had already been decided at that time. I wanted to stay until the end as a startup member," Mori said.

    Regarding the opening of stores in Hirosaki, Mr. Mohri is enthusiastic about "the pizza specialty stores are saturated in Tokyo. Hirosaki still has an opportunity considering the population. I want to make use of the good ingredients to create a store that exceeds the specialty stores in Tokyo."

    The store name is Italian and means "my pizzeria". Each staff member worked with a sense of customer service as the store owner, and I wanted to create a store that is loved by Hirosaki people.

    The store area is about 30 tsubo. There are 40 seats. In addition to a cafe space and bar counter, the store also has a wine cellar and a cheese workshop separated by glass. Bake the pizza in the Italian stone kiln used in Pizzeria da Sasino. It is said that Mr. Mohri himself made the walls using bricks, and the tables were made from scaffolding boards from 50 years ago.

    The menu includes pizza (900 yen and up) and pasta (900 yen and up), as well as "smoked nuts of apple firewood" (500 yen) and "pickles of various vegetables" (700 yen). Drink menus such as "Today's drip coffee" (400 yen), soft drinks (400 yen ~), cup wine (500 yen ~) using homemade roasted coffee beans will be prepared. During lunchtime (11:30-14:00), "Today's pizza" and "Today's pasta" (above 1,200 yen) will be offered.

    Put effort into the side dish menu. In addition to taking out pizza, homemade "Eating Tabasco" (1,000 yen), stewed beef cheek meat in red wine (small = 1,100 yen, large = 2,200 yen), pickled soft-boiled egg (600 yen) Fukinotono oil ( We have a takeout menu such as small = 500 yen, large = 1,000 yen). In the future, he also plans to sell frozen pizza. “We have created a line-up so that you can enjoy course meals at home with our takeout menu,” says Mori.

    Mr. Mohri talks about his dream of future developments such as charter events, setting up a nursery in the store, and a coffee subscription. “I would like to propose a new restaurant way so that locals can think that it is an indispensable place,” he said.

    Business hours are from 8:00 to 23:00 (until 18:00 for the time being).
