    Hirosaki's hamburger specialty shop “Pepe Kitchen” (Hirosaki City Waseda, TEL 0172-55-9266) celebrates its 6th anniversary on March 29.

    The store, which opened in 2013, was launched by Keiji Sato, who had experience at a hamburger specialty store in Tokyo, made a U-turn in 2012. The menu is homemade and Mr. Sato himself mixes the patties. “A hamburger may be a junk dish, but the ingredients are fresh,” says Sato.

    Looking back on the six years, he said, "I didn't advertise anything, and I didn't even have a home page yet, but even early on I had older people come. I think Hirosaki has a culture that is easy to accept new things."

    The store has 15 tsubo and 20 seats. “I've had more shelves, different chairs, and different menus as I interacted with customers. I've changed it little by little in six years,” says Sato. The open terrace, which was created the following year after it opened, is said to have been built together with a gardener who was a hit customer.

    The BGM in the store was a song selected by Taichi Yamamoto, the manager of the select shop “DEELIGHT CALTRAIN” (Matsumori Town), which was named “Pepe Wave” according to the atmosphere of the store, centered on oldies. Play music. “I want to do new things with people I met through the store,” says Sato.

    The menu includes hamburgers (850 yen and up) and sandwiches (700 yen and up), as well as corn beef and mashed potatoes (800 yen), pepe salad (850 yen), and fish and chips (550 yen) on the side menu. Drinks are soft drinks (350 yen and up), beers (500 yen and up), cocktails (600 yen). A hamburger (850 yen and up) with a drink potato is served at lunchtime.

    From 18:00 on the 30th, Mr. Yamamoto will be in charge of DJ under the name of DOGGONE and play music in the store. According to Mr. Sato, the first anniversary event will be held. “We don't offer a special menu, but if you can enjoy unusual music and enjoy a hamburger,” says Sato.

    As for the future, Mr. Sato shows his willingness to aim for a hamburger store that blends with Hirosaki's life.

    Business hours are from 11:00 to 14:00 and from 18:00 to 21:00. Closed on Wednesdays.
