Tsugaru soba specialty store "Ichiro soba" was revived on September 11th at "Co-learning space HLS Hirosaki" (Toshimachi, Hirosaki city) for one day only.

Ichiro soba is nicknamed the store name "Yamahi (ni)", and it is a stall soba shop that the owner, Ichiro Sato, and his wife, Fumi, were all about. Tossed with dried sardines and kombu, the only ingredients are green onions and blue seaweed. Top it up with your favorite. From 1954 (Showa 29) to 1975 (Showa 50), it operated in Hirosaki City Hall courtyard.

According to Fumi, it was so crowded that people could line up every day at noon, but it was decided that the restaurant would be closed at the city hall. Until around 1997, the Josai Shokudo, which was located in the residential area of the Josai housing complex, was operating, and Tsugaru soba was also offered.

Ichiro passed away in 2005. Today, Fumi-san made soba for his family at the dashi at that time on New Year's Day and Bon Festival.

Ryoji Kitagawa, the chairman of the "Hirosaki-loving Elders' Association", said, "This is the first time to start thinking about the Tsugaru soba that has been eaten in the Tsugaru region for the first time, this time the first time. So I remembered those days and realized it."

It was served near the Akimoto noodle shop (Bayamachi), which I had been using since that time, and it was also Fumi's birthday on the same day. Fumi's daughter, Eriko Sakai, smiles, saying, "I wanted to revive Ichiro soba, which is about to be forgotten just as it was, while my mother was fine.

The prepared 50 cups were sold out within the scheduled hour. Sakai says, "If I'm the only daughter, I can't take over Ichiro Soba, so I'll take this opportunity to inherit it from my mother and take it over in some way."
