    On August 1st, "sobabar ciliegio" (TEL 0172-26-6221) opened near the Aomori Bank Memorial Hall (Moto Nagamachi, Hirosaki City).

    The store offers "Ita-soba," which is made by applying the pasta manufacturing method and is particular about ingredients from Aomori prefecture, such as seasonings and toppings. The store area is about 10 tsubo and the number of seats is 28.

    Mr. Nomura, the shopkeeper, is from Hirosaki City. After graduating from high school, I moved to Tokyo to study and went to work at an Italian restaurant in Tokyo. He became interested in ramen when he helped a ramen shop about seven years ago. "Even noodles, utensils, and soups can be displayed with their specialties, and the fact that they can be condensed into one cup is the appeal of ramen unlike Italian," he said.

    The store is based on white, and the logo of the store name was designed by Hirosaki calligrapher Nishikiko Kikuchi. Cilieggio is the Italian word for "cherry tree." A movable fall-prevention fence will be installed in the small raised seats in the store to prevent children from falling. “We want people of all ages, from children to the elderly, to come to the store,” says Nomura.

    The menu includes “soy sauce soba” (800 yen), “sesa Miso soba” (850 yen), seasonal soup soba (900 yen), and rice (average = 150 yen, large serving) Side dishes such as rice (¥200), tori rice (¥300), roast pork bowl (¥400), and noodles are 50 yen off when set with noodles. The drink menu includes soft drinks (200 yen and up) and beer (480 yen and up).

    "There are no regular holidays, but for the time being, we will return to Tokyo or Saitama and work at a ramen shop for the next two weeks," Nomura said.

    “In the future, I would like to send more ramen using ingredients from Aomori. For example, if you use the same recipe and produce ingredients from Aomori prefecture, the taste will be different. Aomori is not only rich in ingredients but also quality. I want to convey the richness not only to people outside the prefecture but also to people within the prefecture through ramen."

    Business hours are from 11:00 to 15:00 and from 17:00 to 21:00.
